Slow Cooked Beef Stroganoff

You can't beat walking through your front door and being welcomed to the smell of a slow cook that has been on all day.  We use our slow cooker a lot during the cooler months and find it very convenient as we often prepare everything and refrigerate the day before.  Serve on a bed of either rice, pasta or mash potato.  

Beef stroganoff ingredients in slow cooker

Serves: 6


    Chopped button mushrooms
  • 1 kg chuck steak or gravy beef
  • 300g button mushrooms - chopped
  • 3 carrots - chopped
  • 1 red onion - chopped
  • 400g diced tomatoes [1 can]
  • 1 cup beef stock
  • 2 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 3 cloves garlic - crushed
  • 2 tbsp tomato puree
  • Plain flour - to coat beef
  • 1 cup sour cream

Equipment: 4-6 litre electric slow cooker

  1. Season meat with salt & pepper then coat in flour.
  2. Heat a splash of olive oil in fry pan then lightly brown meat all over.
  3. In a bowl combine the following ingredients: tomatoes, beef stock, Worcestershire sauce, Dijon mustard, tomato paste and garlic.
  4. Add a splash of olive oil to the slow cooker then add onion, carrots and meat.  Pour the ingredients you just combined over the top.
  5. Season with salt & pepper and cover.
  6. Ready to turn on......

....Cooking times vary depending on slow cooker models so check your instruction manual:  
    1 serving - beef stroganoff
  • 4 hours on high
  • 8 hours on low

Note:  Add mushrooms and stir at 
          half way point.  Add the sour
          cream 10 minutes before
